Why the flavour works: The science behind SALTWELL®’s sensory results

Why the flavour works

Three things explain the sensory results.

The first is the single-grain structure. Because sodium chloride and potassium chloride and trace minerals are naturally crystallized together inside every grain, the potassium is delivered to the palate wrapped in a sodium chloride matrix. That matrix appears to soften the bitter and metallic notes that dominate mechanically blended low-sodium salts. In SALTWELL®’s submission to the UK Food and Drink Federation’s Salt Reduction Supplier Database, consumer trials showed “excellent consumer acceptability”, with the overwhelming opinion being “that it tastes very similar to standard sea salt. In some cases, feedback received has been those SALTWELL® tastes even saltier than standard salt.”

The second is the mineral composition of the underlying natural brine from which the salt stems from. SALTWELL® salt first arrives from being solar-dried and wind-evaporated, with its mineral balance created by nature rather than by a mixer. The result is a clean, rounded, consistent natural salty flavour profile.

The third is functional performance. For example, better yield means moister, juicier finished products, and juiciness reads on the palate as flavour intensity. When a chicken fillet processed with SALTWELL® is described as juicier with improved taste, the two things are linked.

What this means for reformulation

For a technical director working through a portfolio of SKUs against WHO Global Sodium Benchmarks or the PHE salt targets, or just internally motivated sodium/salt guidelines, three practical things stand out.

One: the 1:1 swap really is that simple. SALTWELL® is designed to replace standard salt on a straight weight-for-weight basis, with minimal process adjustment. That’s a big time-saver in an industry where responsiveness matters. There’s no need to rebuild recipes around masking agents, engineer around grain-separation risk in seasoning premixes, or renegotiate specs with retailers. Pair it with the reformulation techniques your team already uses (reducing total salt, adding umami and kokumi boosters, using texture to amplify saltiness perception, and trimming sodium in adjacent ingredients like broths and seasoning blends) and total reductions of up to 40% are achievable without a noticeable drop in eating quality. In categories facing the toughest salt/sodium or HFSS targets, processed meats, ready meals, savoury snacks and bakery, that extra headroom matters.

Three: flavour isn’t a defensive play. The SALTWELL® evidence base points to something the industry rarely gets to say about a sodium-reduction ingredient. Consumers may actually prefer the reformulated product! Better yield means juicier meat. No bitter aftertaste means cleaner seasoning. In blind and semi-blind sensory work, this comes through as improved taste, not just parity. For brands whose reformulation programmes have been framed as a regulatory obligation, that changes the conversation as a product improvement opportunity. And one that’s much easier to communicate with marketing, retailers and consumers.
