The Flavour Advantage: How SALTWELL® Enhances taste while cutting sodium by up to 40%
Sodium reduction has a reputation problem.
For years, food manufacturers have been told they can have lower sodium or great flavour, but not both. Cut the salt, and food tastes flat. Add potassium chloride to make up the difference, and you get bitterness, metallic off-notes and a bank of masking ingredients on the label to hide them and it is no longer a clean label.
For product developers and technical directors working to meet sodium targets without upsetting long-standing customers, this trade-off has become the defining challenge of modern reformulation.
But it doesn’t have to be.
SALTWELL® is an all-natural sea salt with 35% less sodium than conventional food-grade salt. Combined with other reformulation levers, it can deliver sodium reductions of up to 40% in finished products. And unlike most sodium reduction ingredients, it doesn’t ask food manufacturers to sacrifice taste to get there. In many tested applications, SALTWELL® actually improves the flavour of the finished food.
Here’s what the sensory evidence shows, and why it matters for anyone reformulating salt and sodium level in processed foods for grocery and food service.
The salt problem now has a solution.
Salt does more than season food. In processed foods, it’s a working ingredient. It preserves. It extracts the proteins that bind meat systems together. It controls water-holding capacity, texture and yield. Take it out, and every one of those functions suffers.
The usual workaround is to blend conventional salt with potassium chloride. This hits the sodium number on the table, but it brings two big problems.
First, potassium chloride tastes bitter and metallic. That’s why so many “low sodium” products carry a supporting cast of expensive masking agents, yeast extracts and flavour enhancers.
Second, because the two salts are separate grains, they can separate during storage and processing. This produces inconsistent seasoning and unpredictable flavour delivery from one batch to the next. Not ideal for an industry where consistency is everything.
SALTWELL® is different because it solves both problems at the ingredient itself. Since its mineral balance is created by nature rather than mechanical blending, SALTWELL provides a clean, rounded, consistent salty flavour profile comparable to standard salt, with similar functional properties.
“Since we have the opportunity to work with SALTWELL®, a salt with a natural combination of minerals that is also 35% less sodium in one grain, not a blend, the negative taste impact of potassium chloride disappeared. Compared to other sodium reduction solutions with 35% reduction, the flavour of SALTWELL® is natural salt like, and the labelling is more consumer friendly than, for example, potassium chloride or additive E508. Other solutions I have worked with are more expensive, or they give a non-salty taste profile.”

What the sensory data shows
SALTWELL® has been tested by trained sensory panels, consumer panels and instrumental analysis across meat, poultry, seafood, plant-based, bakery and snacks, for decadesThe findings are consistent. At parity with conventional salt, SALTWELL® performs the same on the palate. Against potassium chloride blends, it wins on flavour and overall acceptability. And in a good number of applications, it actually beats standard salt on taste, juiciness or yield.
